St. Charles Exchange restaurant and bar to open Derby weekend with prix fixe menu

Talk about just crossing the wire … the St. Charles Exchange, a new restaurant and bar concept in downtown Louisville (113 S. 7th Street, to be precise), will open Derby weekend. (What was that sound? About 200 chefs and restaurateurs gasping?)

Not that this is this team’s first rodeo, to be sure, plus they’re doing it smart with a prix fixe menu served just Derby Eve (Friday, May 4) and Derby Day (Saturday, May 5).

The menu will feature hors d’oeuvre and three courses created by executive chef Mitch Prensky, and cost $85 per person. Cocktails and wine pairings for each course will also be recommended. The menu includes:

  • Hors d’oeuvre: choice of black truffle deviled eggs; or marinated olives with orange, dried chilis and mint
  • First course: local greens and herbs salad with spiced apples, smoked chicken cracklin’s, cornbread and buttermilk dressing
  • Second course: choice of line-caught swordfish or grilled dry-aged strip loin and baharat-cured foie gras; both served with braised escarole, creamy oregano rice, lemon jam and salsa verde
  • Dessert: banana bread pudding, nutella, vanilla ice cream
