Gordon Biersch Brewery Restaurant announced it will open its first Louisville brewery-restaurant (its 34th overall) on May 21 on Fourth Street Live! in the space once home to Borders.
According to a news release, the 500-seat, 9,000 square-foot site will include an on-site brewery (not all GBs have them) and full bar. It will employ 115 staffers and operate seven days a week.
Founded in Palo Alto, Calif., 20 years ago, its headquarters have since moved to Chattanooga, Tenn. It has locations in 20 states.
Gordon Biersch offers eclectic, sophisticated décor within a relaxed atmosphere that includes high-definition, plasma flat-screen televisions and outside seating along Liberty and Fourth Streets.

Beers of interest: Gordon Biersch produces six authentic lagers: Golden Export, Hefeweizen, Czech Pilsner, Märzen (Maert-zen), Schwarzbier and a rotating seasonal offering. Several “Brewer’s Choice” selections will always be available in rotation.
Food and featured dishes: The menu includes chef-inspired dishes including Lobster & Shrimp Tacos, California Cobb Flatbread, Grilled Chicken & Avocado Sandwich, Bistro Steak Medallions and Crab Stuffed Shrimp, just to name a few.
Hours for the new GB are Sunday-Monday 11 a.m.-10 p.m. (bar 11 a.m.-midnight); Tuesday through Thursday, 11 a.m.-11 p.m. (bar 11 a.m.-midnight); and Friday and Saturday, 11 a.m.- midnight (bar 11 a.m.-2 a.m.)
